Cheese Pizza

CACFP: 1 serving = 1 bread, 1/4 fruit/vegetable, 1/2 meat
Makes 2 pizzas = 20 servings

Ingredients:

  • Yeast - 1 1/2 Tablespoons
  • Flour, whole-grain - 3 1/3 cups
  • Water - 2 Tablespoons
  • Milk - 2/3 cups
  • Oil - 6 Tablespoons
  • Honey - 3 Tablespoons
  • Tomato Sauce - 2 1/2 cups
  • Spice Mix - 2 Tablespoons
  • Mozzarella Cheese - 1 pound 8 ounces
  • Parmesan Cheese, grated - 2/3 cup

    Directions:

  • 1. Mix yeast with half the flour and set aside.
  • 2. Heat milk, water, oil, and honey to 115 degrees. Use candy thermometer to measure temperature.
  • 3. Pour milk mixture into flour and yeast. Mix, then knead for three minutes.
  • 4. Add remaining flour and mix with dough hook or by hand.
  • 5. Allow dough to sit covered for 10 minutes.
  • 6. Divide dough into 2 piles.
  • 7. Roll each out on a floured board.
  • 8. Place rolled dough on a pizza pan and, using oiled fingers, spread dough to rim forming slightly raised edges.
  • 9. Spread tomato sauce on dough and sprinkle with spice mix.
  • 10. Shred mozzarella cheese.
  • 11. Cover pizzas with shredded mozzarella and sprinkle Parmesan cheese over the top.
  • 12. Bake for 20 minutes at 400 degrees.

    Note: If serving fewer than 20, regrigerate or freeze unused pizzas to serve at a later date. (Leftovers should be labeled and dated.)
