Corn Bread
CACFP: 1 serving = 1 bread
Makes 6 servings
Ingredients:
Yellow Corn Meal - 3/4 cup
Flour, whole grain - 3/4 cup
Baking Powder - 1 Tablespoon
Milk - 3/4 cup
Eggs, medium - 1
Margarine - 1/4 cup
Directions:
1. Combine dry ingredients.
2. Add milk, eggs, and margarine.
3. Beat until smooth - about 1 minute.
4. Lightly grease skillet with shortening.
5. Preheat skillet in oven at 425 degrees for 15 minutes.
6. Pour batter into preheated skillet and bake at 425 degrees for 15-20 minutes.
7. Cut into 6 portions.
