Corn Bread

CACFP: 1 serving = 1 bread
Makes 6 servings

Ingredients:

  • Yellow Corn Meal - 3/4 cup
  • Flour, whole grain - 3/4 cup
  • Baking Powder - 1 Tablespoon
  • Milk - 3/4 cup
  • Eggs, medium - 1
  • Margarine - 1/4 cup

    Directions:

  • 1. Combine dry ingredients.
  • 2. Add milk, eggs, and margarine.
  • 3. Beat until smooth - about 1 minute.
  • 4. Lightly grease skillet with shortening.
  • 5. Preheat skillet in oven at 425 degrees for 15 minutes.
  • 6. Pour batter into preheated skillet and bake at 425 degrees for 15-20 minutes.
  • 7. Cut into 6 portions.
