Egg Puff

CACFP: 1 egg puff = 1/2 meat (optional)
Makes 6 servings

Ingredients:

  • Eggs, medium - 2
  • Biscuit Mix - 1/4 cup
  • Cheddar Cheese - 2 ounces
  • Milk - 5 ounces
  • Dry Mustard - 1/4 teaspoon
  • Cooking Spray

    Directions:

  • 1. Grease muffin pans (one muffin container per child) with cooking spray.
  • 2. Grate cheese.
  • 3. Mix all ingredients with hand mixer
  • 4. Pour 1/4 cup of mixture into each muffin container.
  • 5. Bake about 20 minutes at 350 degrees. Centers should be firm.
  • 6. Let sit for 5 minutes before serving.

    Note: Egg Puff can be served on a toasted junior size hamburger bun, English muffin, or biscuit to resemble a fast food-type egg sandwich. You could substitute the bun, muffin, or biscuit for the toast in this menu.
