1. Separate eggs as indicated above and discard the yolk.
2. Mix eggs, milk, and cinnamon in a blender until thoroughly blended.
3. Heat griddle over medium heat.
4. Melt 1 tablespoon margarine and coat griddle. Be sure to coat griddle with margarine each time you cook another batch.
5. Dip bread in egg mixture and place on hot griddle.
6. Brown bread on both sides.
7. Remove from griddle and cut each bread slice into three strips.
8. Store on cookie sheet in warm oven until time to serve.
Note: Instead of serving syrup with French Toast Sticks, let the children dip them in their applesauce. If you have the time, put applesauce (3 cups) in a large pan and add vanilla extract (1/2 teaspoon). Sprinkle with cinnamon and dot with margarine. Warm applesauce while heating French Toast Sticks. Great on a cold day!
