Lemon Cookies
CACFP: 1 cookie = 1 bread
Makes 20 servings
Ingredients:
Margarine - 6 Tablespoons
Sugar - 1/3 cup
Eggs - 1
Lemon Extract - 1 teaspoon
Lemon Rind, grated - 1/2 teaspoon
Flour - 1 1/4 cup
Salt - 2 dash
Baking Powder - 3/4 teaspoon
Cooking Spray
Directions:
1. Cream together margarine and sugar.
2. Add eggs, lemon extract, and lemon rind. Mix well.
3. Gradually add flour, salt, and baking powder, mixing well after each addition.
4. Roll dough about 1/4 inch thick on lightly floured board.
5. Cut with two-inch cookie cutter and place on cookie sheet greased with cooking spray.
6. Bake 7 minutes at 400 degrees.
Note: If serving fewer than 20, refrigerate or freeze unused cookies to serve at a later date. (Leftovers should be labeled and dated.)
