Lemon Cookies

CACFP: 1 cookie = 1 bread
Makes 20 servings

Ingredients:

  • Margarine - 6 Tablespoons
  • Sugar - 1/3 cup
  • Eggs - 1
  • Lemon Extract - 1 teaspoon
  • Lemon Rind, grated - 1/2 teaspoon
  • Flour - 1 1/4 cup
  • Salt - 2 dash
  • Baking Powder - 3/4 teaspoon
  • Cooking Spray

    Directions:

  • 1. Cream together margarine and sugar.
  • 2. Add eggs, lemon extract, and lemon rind. Mix well.
  • 3. Gradually add flour, salt, and baking powder, mixing well after each addition.
  • 4. Roll dough about 1/4 inch thick on lightly floured board.
  • 5. Cut with two-inch cookie cutter and place on cookie sheet greased with cooking spray.
  • 6. Bake 7 minutes at 400 degrees.

    Note: If serving fewer than 20, refrigerate or freeze unused cookies to serve at a later date. (Leftovers should be labeled and dated.)
