Lemon Cookies
CACFP: 1 cookie = 1 bread


Ingredients 20 servings
Margarine 6 Tablespoons
Sugar ⅓ cup
Eggs 1
Lemon Extract 1 teaspoon
Lemon Rind, grated ½ teaspoon
Flour 1¼ cups
Salt 2 dash
Baking Powder ¾ teaspoon
Cooking Spray  



  • 1. Cream together margarine and sugar.
  • 2. Add eggs, lemon extract, and lemon rind. Mix well.
  • 3. Gradually add flour, salt, and baking powder, mixing well after each addition.
  • 4. Roll dough about ¼ inch thick on lightly floured board.
  • 5. Cut with two-inch cookie cutter and place on cookie sheet greased with cooking spray.
  • 6. Bake 7 minutes at 400 degrees.

    Note: These cookies freeze well. Make at least 20 and freeze the extras to serve at a later date.

    Plan Ahead Tip: You can make this recipe ahead of time up to step 4. Just roll dough into log, wrap in wax paper and freeze. When you are ready to bake just remove from freezer, take off wax paper and slice off cookies, about ¼ inch thick.
