Macaroni Beef & Cheese
CACFP: 1 serving = 1 meat, 1 bread
Makes 6 servings
Ingredients:
Ground Beef - 8 ounces
Spice Mix - 1 teaspoon
Dry Mustard - 1 teaspoon
Margarine - 1 1/2 Tablespoons
Flour, whole-grain - 1 1/2 Tablespoons
Milk - 3/4 cup
Cheddar Cheese - 4 ounces
Elbow Macaroni, dry - 1 1/8 cups
Bread Crumbs, whole-grain
Directions:
1. Brown ground beef in a skillet and drain fat.
2. Add spice mix and mustard and stir well.
3. Make thin white sauce by melting margarine and then gradually adding flour. Stir constantly. Slowly add milk, stirring until heated through.
4. Stir white sauce into meat.
5. Grate cheddar cheese and add to meat mixture, stirring thoroughly.
6. Cook macaroni according to directions on the box and drain.
7. Toss noodles with meat/cheese mixture until evenly mixed and then place in casserole or baking pan greased with cooking spray.
8.Sprinkle top with bread crumbs.
9. Cover and bake 15 minutes at 400 degrees. Remove cover and bake 5 minutes longer.
10. Divide into 6 equal portions.
Note: Use bread loaf ends to make bread crumbs by drying them in a warm oven. Let cool and chop in food processor.
