Mashed Potatoes
CACFP: 1/4 cup = 1/2 fruit/vegetable
Makes 6 servings
Ingredients:
White Potatoes, fresh, unpeeled - 15 ounces
Water - 1 1/4 cups
Milk, heated - 3 ounces
Margarine, softened - 1 Tablespoon
Directions:
1. Scrub potatoes well and cut into quarters.
2. Boil potatoes about 25 minutes until tender. Drain.
3. Mash potatoes in mixer on low speed until smooth.
4. Gradually, add just enough milk to moisten.
5. Add margarine while beating on low speed.
6. Mix on high speed until blended and potatoes are light and fluffy.
7. Servce with 1/4 cup measuring scoop.
