Mashed Potatoes
CACFP: ¼ cup = ½ fruit/vegetable


Ingredients 6 servings 20 servings
White Potatoes, fresh, unpeeled 15 ounces 3 pounds
Water 1¼ cups 1 quart
Milk, heated 3 ounces ¾ cup
Margarine, softened 1 Tablespoon ¼ cup



  • 1. Scrub potatoes well and cut into quarters.
  • 2. Boil potatoes about 25 minutes until tender. Drain.
  • 3. Mash potatoes in mixer on low speed until smooth.
  • 4. Gradually, add just enough milk to moisten.
  • 5. Add margarine while beating on low speed.
  • 6. Mix on high speed until blended and potatoes are light and fluffy.
