Mashed Potatoes

CACFP: 1/4 cup = 1/2 fruit/vegetable
Makes 6 servings

Ingredients:

  • White Potatoes, fresh, unpeeled - 15 ounces
  • Water - 1 1/4 cups
  • Milk, heated - 3 ounces
  • Margarine, softened - 1 Tablespoon

    Directions:

  • 1. Scrub potatoes well and cut into quarters.
  • 2. Boil potatoes about 25 minutes until tender. Drain.
  • 3. Mash potatoes in mixer on low speed until smooth.
  • 4. Gradually, add just enough milk to moisten.
  • 5. Add margarine while beating on low speed.
  • 6. Mix on high speed until blended and potatoes are light and fluffy.
  • 7. Servce with 1/4 cup measuring scoop.
