Whole Wheat Raisin Cookies

CACFP: 1 cookie = 1 bread
Makes 50 servings

Ingredients:

  • Flour, whole-grain - 2 cups
  • Baking Powder - 1 1/2 teaspoons
  • Cinnamon - 1/2 teaspoon
  • Brown Sugar, packed - 1/3 cup
  • Vegetable Shortening - 2/3 cup
  • Eggs, medium - 1
  • Milk - 1/4 cup
  • Vanilla - 1 teaspoon
  • Applesauce - 1/2 cup
  • Raisins - 1 cup
  • Cooking Spray

    Directions:

  • 1. Mix flour, baking powder, and cinnamon. Set aside.
  • 2. Cream sugar and shortening.
  • 3. Add egg, milk, vanilla, and applesauce to creamed mixture. Mix well.
  • 4. Stir in dry ingredients. Add raisins and mix well.
  • 5. Drop by teaspoonful one inch apart onto baking sheet greased with cooking spray.
  • 6. Bake 9 minutes at 350 degrees.

    Note: If serving fewer than 50, refrigerate or freeze unused cookies to serve at a later date. (Leftovers should be labeled and dated.)
