Whole Wheat Raisin Cookies
CACFP: 1 cookie = 1 bread
Makes 50 servings
Ingredients:
Flour, whole-grain - 2 cups
Baking Powder - 1 1/2 teaspoons
Cinnamon - 1/2 teaspoon
Brown Sugar, packed - 1/3 cup
Vegetable Shortening - 2/3 cup
Eggs, medium - 1
Milk - 1/4 cup
Vanilla - 1 teaspoon
Applesauce - 1/2 cup
Raisins - 1 cup
Cooking Spray
Directions:
1. Mix flour, baking powder, and cinnamon. Set aside.
2. Cream sugar and shortening.
3. Add egg, milk, vanilla, and applesauce to creamed mixture. Mix well.
4. Stir in dry ingredients. Add raisins and mix well.
5. Drop by teaspoonful one inch apart onto baking sheet greased with cooking spray.
6. Bake 9 minutes at 350 degrees.
Note: If serving fewer than 50, refrigerate or freeze unused cookies to serve at a later date. (Leftovers should be labeled and dated.)
