Chicken Salad Sandwiches
CACFP: 1 sandwich = 1 bread; 1/2 meat

- 1. Place chicken in large soup pot and cover with water. Cover pan and bring to a boil. Lower heat and simmer chicken for 2 hours. Pour broth off chicken, reserving it for use in making Bueno Bean Soup. Be sure to skim fat before using broth.
- 2. Pull chicken from bones, discarding the skin. Chop meat into small pieces; a food processor works well for this task.
- 3. Put cooled chicken meat, mayonnaise and relish in large bowl. Mix well.
- 4. Spread on bread, using 1/4 cup measuring cup to measure each serving.
- Note: This makes an excellent pasta salad when you add spiral noodles.
