Chicken Salad Sandwiches
CACFP: 1 sandwich = 1 bread; 1/2 meat


 
Ingredients 6 servings 20 servings
Chicken, whole 1 pound 3 pounds
Mayonnaise, reduced-fat 2 Tablespoons 2/3 cup
Sweet Relish 2 Tablespoons 2/3 cup
Bread, thin sliced 12 40

 
  • 1. Place chicken in large soup pot and cover with water. Cover pan and bring to a boil. Lower heat and simmer chicken for 2 hours. Pour broth off chicken, reserving it for use in making Bueno Bean Soup. Be sure to skim fat before using broth.
  • 2. Pull chicken from bones, discarding the skin. Chop meat into small pieces; a food processor works well for this task.
  • 3. Put cooled chicken meat, mayonnaise and relish in large bowl. Mix well.
  • 4. Spread on bread, using 1/4 cup measuring cup to measure each serving.
  • Note: This makes an excellent pasta salad when you add spiral noodles.
