Cornbread

 
Ingredients 6 servings
(We will double or triple this recipe.)
Yellow Corn Meal 3/4 cup
Flour, enriched or whole grain 3/4 cup
Baking Powder 1 Tbsp
Milk 3/4 cup
Eggs, medium 1
Margarine 1/4 cup

 
 
1. Combine dry ingredients.
2. Add milk, eggs and margarine.
3. Beat until smooth - about 1 minute.
4. Lightly grease cast iron skillet with shortening.
5. Preheat skillet in oven at 425 degrees for 15 minutes.
6. Pour batter into preheated skillet and bake at 425 degrees for 15-20 minutes.
7. Cut into portions equal to number of children to be served.


We served the Cornbread with chili, baked apples and milk for a nutritious lunch.
