Cornbread
CACFP: 1 serving = 1 bread


 
Ingredients 6 servings 20 servings
Yellow Corn Meal 3/4 cup 1&1/2 cups
Flour, enriched or whole grain 3/4 cup 1&1/2 cups
Baking Powder 1 Tablespoon 2 Tablespoons
Milk 3/4 cup 1&1/2 cups
Eggs, medium 1 2
Margarine  1/4 cup  1/2 cup

 
  • 1. Combine dry ingredients.
  • 2. Add milk, eggs and margarine.
  • 3. Beat until smooth - about 1 minute.
  • 4. Lightly grease cast iron skillet with shortening.
  • 5. Preheat skillet in oven at 425 degrees for 15 minutes.
  • 6. Pour batter into preheated skillet and bake at 425 degrees for 15-20 minutes.
  • 7. Cut into portions equal to number of servings.
