Egg Puff
Ingredients |

(We will double or triple this recipe.) |
Eggs, medium |

Biscuit Mix |
1/4 cup |
Cheddar Cheese |
2 oz |
Milk |
5 oz |
Dry Mustard |
1/4 tsp |
Cooking Spray |

1. Preheat oven to 350 degrees.
2. Grease muffin pans (one muffin per child) with cooking spray.
3. Grate cheese.
4. Mix all ingredients with hand mixer.
5. Pour 1/4 cup mixture into each muffin container.
6. Bake about 20 minutes. Centers should be firm.
7. Let sit for 5 minutes before serving.
Notes: Egg puff can be served on a toasted junior size hamburger bun, English muffin or biscuit to resemble a fast food-type egg sandwich. You could also substitute the bun, muffin or biscuit for the toast in this menu.
We served the Egg Puff with toast, mandarin oranges and milk for a nutritious breakfast.
