Egg Puff
CACFP: 1 egg puff = 1/2 meat 


 
Ingredients 6 servings 20 servings
Eggs, medium 2 6
Biscuit Mix 1/4 cup 3/4 cup
Cheddar Cheese 2 ounces 7 ounces
Milk 5 ounces 2 cups + 2 ounces
Dry Mustard 1/4 teaspoon 1 teaspoon
Cooking Spray

 
  • 1. Grease muffin pans (one muffin container per child) with cooking spray.
  • 2. Grate cheese.
  • 3. Mix all ingredients with hand mixer.
  • 4. Pour 1/4 cup of mixture into each muffin container.
  • 5. Bake about 20 minutes at 350 degrees. Centers should be firm.
  • 6. Let sit for 20 minutes before serving.
  • Note: Egg puff can be served on a toasted junior size hamburger bun, English muffin or biscuit to resemble a fast food-type egg sandwich. You could substitute the bun, muffin or biscuit for the toast in this menu.
