Ham and Cheese Pie
CACFP: 1 serving = 1 meat


 
Ingredients 6 servings 20 servings
Eggs, medium 2 6
Milk 1 cup 3 cups
Biscuit Mix 1/2 cup 1&1/2 cups
Spice Mix 1 teaspoon 1 Tablespoon
Ham, boneless, canned 12 ounces 2 pounds
Monterey Jack Cheese, grated 1/2 cup 2 cups 
Cooking Spray

 
  • 1. Lightly coat pan with cooking spray.
  • 2. Mix eggs, milk, biscuit mix and spice mix together. Mix with beater or blender in smaller portions.
  • 3. Shred ham in food processor and put in bottom of pan.
  • 4. Grate cheese and sprinkle over ham.
  • 5. Pour egg mixture over ham and cheese.
  • 6. Bake for 40 minutes at 400 degrees.
  • 7. Let sit for 15 minutes before cutting into.
  • Note: Just about any cheese will taste fine in this casserole. Mixing some shredded cheddar with the Monterey Jack gives a different flavor.
