Lemon Cookies
CACFP: 1 cookie = 1 bread

Margarine |
6 Tablespoons |
Sugar |
1/3 cup |
Eggs |

Lemon Extract |
1 teaspoon |
Lemon Rind, grated |
1/2 teaspoon |
Flour |
1&1/4 cups |
Salt |
2 dash |
Baking Powder |
3/4 teaspoon |
Cooking Spray |

- 1. Cream together margarine and sugar.
- 2. Add eggs, lemon extract and lemon rind. Mix well.
- 3. Gradually add flour, salt and baking powder, mixing well after each addition.
- 4. Roll dough about 1/4 inch thick on lightly floured board.
- 5. Cut with two-inch cookie cutter and place on cookie sheet greased with cooking spray.
- 6. Bake 7 minutes at 400 degrees.
- Note: You can make this recipe ahead of time up to step 4. Just roll dough into log, wrap in wax paper and freeze. When you are ready to bake just remove from freezer, take off wax paper and slice off cookies, about 1/4" thick.
