Macaroni Beef and Cheese

| Cheddar Cheese |

| Elbow Macaroni, dry |

| Bread Crumbs, whole-grain |

- 1. Brown ground beef in an iron skillet and drain fat.
- 2. Add spice mix and mustard and stir well.
- 3. Make thin white sauce by melting margarine and then gradually adding flour. Stir constantly. Slowly add milk, stirring until heated through.
- 4. Stir white sauce into meat.
- 5. Grate cheddar cheese and add to meat mixture, stirring thoroughly.
- 6. Cook macaroni according to directions on the box and drain.
- 7. Toss noodles with meat/cheese mixture until evenly mixed and then place in casserole or baking pan greased with cooking spray.
- 8. Sprinkle top with bread crumbs.
- 9. Cover with foil and bake for 15 minutes at 400 degrees. Remove foil and bake 5 minutes longer.
- 10. Divide into portions (approx. 3/4 cup per child) equal to the number of children to be served.
- Note: Use bread loaf ends to make bread crumbs by drying them in a warm oven. Let cool and chop in food processor.
