Mashed Potatoes
CACFP: 1/4 cup = 1/2 fruit/vegetable

White Potatoes, fresh, unpeeled |
15 ounces |
3 pounds |
Water |
1&1/4 cup |
4 cups |
Milk, heated |
3 ounces |
3/4 cup |
Margarine, softened |
1 Tablespoon |
1/4 cup |
- 1. Scrub potatoes well and cut into quarters.
- 2. Boil potatoes about 25 minutes until tender. Drain.
- 3. Mash potatoes in mixer on low speed until smooth.
- 4. Gradually, add just enough milk to moisten.
- 5. Add margarine while beating on low speed.
- 6. Mix on high speed until blended and potatoes are light and fluffy.
- 7. Serve with 1/4 cup measuring cup.
