Pumpkin Cookies
CACFP: 1 cookie = 1 bread

1/3 cup |
Margarine, melted |

Pumpkin |
1/2 cup |
Eggs, medium |

1 teaspoon |
Flour, enriched or whole-grain |
1&1/4 cup |
Baking Soda |
1/2 teaspoon |
Baking Powder |
1/2 teaspoon |
Pumpkin Pie Spice |
1/2 teaspoon |
Cooking Spray |

Confectioners Sugar (optional) |

- 1. Mix sugar, margarine, pumpkin, egg and vanilla.
- 2. Add dry ingredients.
- 3. Beat well. Dough should be stiff; add more flour if necessary.
- 4. Drop by spoonfuls onto a cookie sheet greased with cooking spray or lined with parchment paper.
- 5. Bake at 350 degrees for 15 minutes.
- 6. Dust with confectioners sugar, if desired.
- Note: If serving fewer than 20, refrigerate for freeze unused cookies to serve at a later date.
