Oatmeal Raisin Cookies
CACFP: 1 cookie = 1 bread

Flour, enriched or whole-grain |

Baking Powder |
1&1/2 teaspoons |
Cinnamon |
1/2 teaspoon |
Brown Sugar, packed |
1/3 cup |
Vegetable Shortening |
2/3 cup |
Eggs, medium |

Milk |
1/4 cup |
Vanilla |
1 teaspoon |
Applesauce |
1/2 cup |
Raisins |
1 cup |
Cooking Spray |

- 1. Mix flour, baking powder and cinnamon. Set aside.
- 2. Cream sugar and shortening.
- 3. Add egg, milk, vanilla and applesauce to creamed mixture. Mix well.
- 4. Stir in dry ingredients. Add raisins and mix well.
- 5. Drop by teaspoonful one inch apart onto baking sheet greased with cooking spray.
- 6. Bake 9 minutes at 350 degrees.
- Note: If serving fewer than 50, refrigerate or freeze unused cookies to serve at a later date.
